The present fourth edition of the text “Hygiene of Mammalian Meat”, twenty-two years after the first, is addressed to those who have a special interest in studying the subject in depth, but also to those who are interested in enriching their knowledge of it.
During the preparation of the text, every effort was made to include elements that will help scientists of all disciplines, who will delve into the text to easily understand what is stated in it, without the need to refer to other sources as a rule.
Experience has shown that it is difficult, regardless of the author’s level of experience, to keep a text as up-to-date as possible when the sciences, related technologies and the way knowledge is transferred are rapidly advancing and spreading.
